🌿 High Protein Pesto Pasta 🍝

This vibrant pasta packs protein and nutrients with a fresh, homemade pesto and colorful veggies. Easy to mix together for meal prep.

Ingredients:

  • Macaroni noodles

  • Ground turkey

  • Pesto

    • Pistachio and pine nuts

    • Basil

    • Unexpected cheddar cheese

    • Olive oil

    • Lemon (zest & juice)

    • salt & pepper

  • Frozen broccoli, thawed

  • Frozen peas, thawed

Instructions:

  1. Make the pesto by blending pistachios, pine nuts, basil, olive oil, lemon zest and juice, and cheese.

  2. Cook ground turkey in olive oil separately until fully cooked. Let it cool and break into small pieces by hand.

  3. Cook macaroni noodles in salted water. Reserve a bit of pasta water and stir into the pesto.

  4. Thaw frozen broccoli and peas, then combine with the shredded turkey.

  5. Add remaining pesto to the turkey and veggie mixture.

  6. Plate cooked pasta and top with the turkey and veggie pesto mix.
