Kale Scrambled Eggs

A quick, high-protein scramble with a boost of greens. Perfect alongside pancakes for a balanced morning.

Ingredients:

  • 12 eggs 

  • shredded kale

  • ground chicken

  • salt & pepper

  • olive oil

Instructions:

  1. Add olive oil to sauté pan over medium-high heat.

  2. Add shredded kale and sauté until it begins to wilt

  3. Add in ground chicken and sauté until fully cooked.

  4. In a separate bowl, scramble eggs and add salt & pepper.

  5. Pour into pan with kale and chicken, and scramble until cooked through.

  6. ENJOY!
