🍓🍒Berry Cherry Cardamom Breakfast Bread


This breakfast bread feels a little indulgent but fits perfectly into a practical meal prep plan. The combination of berries, cherries, and cardamom brings a warm and bright flavor to busy mornings.


Ingredients:

  • 2 cups flour

  • 2 Tbsp baking powder

  • ¾ cup unflavored protein powder

  • 2 tsp freshly ground cardamom

  • 2 large eggs

  • 1 ½ cups milk

  • ¼ cup olive oil

  • 1 container mascarpone cheese

  • 1 bag frozen mixed berries, thawed

  • 1 bag frozen cherries, thawed

  • coconut oil spray

Instructions:

  1. Preheat oven to 375° F and spray meal prep containers with coconut oil.

  2. In a large bowl, whisk together flour, baking powder, and protein powder and ground cardamom.

  3. Make a well in the center and add eggs, milk and olive oil.

  4. Mix until just combined, then gently fold in the thawed berries and cherries.

  5. Gently stir in 3 Tbsp of mascarpone cheese and set the remaining amount aside.

  6. Portion into meal prep containers.

  7. Add one spoonful to each serving and gently swirl into batter.

  8. Transfer meal prep containers to oven on a baking sheet.

  9. Bake until cooked through, ~20 mins, and lightly golden.
