Goat Cheese Meatloaf Recipe
A lighter take on a comfort classic. The goat cheese adds creaminess, and baking the meatloaf directly in the containers saves cleanup time and keeps portioning easy.
Ingredients:
Ground turkey
Goat cheese
Eggs
Finely diced onions
Olive oil
Salt and pepper
Frozen mushrooms
Frozen green beans
Farro
Instructions:
In a large bowl, combine goat cheese, finely diced onions, and eggs. Mix until smooth, then add ground turkey and stir until fully combined.
Season with salt and pepper, or sprinkle them on top before baking.
Lightly spray your meal prep containers and divide the mixture evenly into them to form mini meatloaves. Bake until fully cooked through.
While the meatloaves bake, cook farro according to package directions.
In a skillet, sauté frozen mushrooms and green beans in olive oil with a pinch of salt until tender.
Once everything is cooked, serve the meatloaf with a scoop of farro and a side of the mushroom-green bean mix.
