Leek Soufflé Recipe

🍳 Leek Soufflé


Leeks are so flavorful and baking them into this soufflé was a win!


Ingredients:

  • Eggs

  • Cottage cheese

  • Leeks

  • Ground chicken

  • Salt and pepper

Instructions:

  1. Preheat oven to 375° F and spray meal prep containers with coconut oil.

  2. Slice leeks thinly and divide them between oven-safe meal prep containers.

  3. Sauté ground chicken in olive oil until cooked through and then add leeks to sauté.

  4. Blend cottage cheese until smooth and creamy, then whisk with eggs, salt, and pepper.

  5. Pour the egg mixture over the leeks and chicken.

  6. Bake until set and lightly golden.

  7. Bake until cooked through, ~20 mins, and lightly golden.
