Pumpkin Cream Cheese Zucchini Bread Recipe
🎃 Pumpkin Cream Cheese Zucchini Bread
This will be your new favorite pumpkin bread. Moist, high-protein, and lightly spiced, this pumpkin bread is the perfect sweet breakfast addition. The zucchini adds moisture and fiber, and the cream cheese swirl gives it just the right amount of richness.
Ingredients:
2 cups flour
2 Tbsp baking powder
2 tsp freshly ground cardamom
2 large eggs
1 ½ cups milk
¼ cup olive oil
1 can pumpkin puree
½ cup Zucchini grated & drained
1 package cream cheese
Instructions:
Preheat oven to 350°F and spray meal prep containers with coconut oil.
Mix the dry ingredients in one bowl and set aside.
In another bowl, whisk milk, eggs, and maple syrup.
In a small bowl, mix softened cream cheese with ⅔ of the pumpkin puree and pumpkin pie spice.
Combine the pumpkin mixture with the egg mixture, then add to the dry ingredients.
Stir in grated and drained zucchini until just combined.
Spray coconut oil on glass meal prep containers and portion the batter evenly.
Add a swirl of pumpkin butter on top (optional but recommended).
Bake for about 25 minutes or until a toothpick comes out clean.
