🥕 Roasted Cumin Chicken and Carrots with Whipped Feta
This meal brings together sweet roasted carrots, smoky cumin, and tangy whipped feta for the perfect mix of texture and flavor.
Ingredients:
Chicken breast
Baby carrots
Shredded brussels sprouts
Tuscan kale
Feta
Olive oil
Cumin
Thyme
Cayenne pepper
Salt and pepper
Instructions:
Preheat oven to 400°F.
Toss baby carrots in olive oil, salt, pepper, cumin, and thyme. Roast until tender.
Add brussels sprouts to the same pan with olive oil, cumin, cayenne, salt, and pepper. Roast until crisp.
In a baking dish, whisk olive oil, cumin, cayenne, salt, and pepper to make a wet rub. Coat chicken breasts and roast until fully cooked.
For the whipped feta, blend feta with a drizzle of olive oil, lemon zest, and a bit of garlic until creamy.
To assemble, spread whipped feta in the bottom of each meal prep container. Top with roasted carrots, brussels sprouts, kale, and sliced chicken.
