Sun Dried Tomato Dense Bean Salad Recipe

Sun Dried Tomato Dense Bean Salad Recipe

Salad Ingredients:

  • Chicken breast

  • sun dried tomatoes 

  • shaved Brussels sprouts

  • white beans

  • chickpeas

  • delicata squash 

  • farro

  • olive oil

  • salt & pepper

Sun Dried Tomato Dressing Ingredients

  • olive oil

  • red wine vinegar

  • 2 garlic cloves

  • salt & pepper

  • shallots

Instructions:

  1. Roast the vegetables

    • Preheat oven to 400°F (200°C).

    • Spread shaved Brussels sprouts and delicata squash on a baking sheet.

    • Toss with olive oil, salt, and pepper.

    • Roast for 20 minutes, stirring halfway through, until tender and lightly browned.

  2. Roast the chicken

    • While the vegetables are roasting, place chicken breasts on a separate baking sheet.

    • Drizzle with oil from the sun dried tomato jar.

    • Roast for 20 to 25 minutes, until fully cooked through, depending on thickness.

  3. Cook the farro

    • Cook farro in water according to package instructions. Drain and set aside to cool slightly.

  4. Make the dressing

    • Using an immersion blender, combine olive oil, red wine vinegar, garlic cloves, salt, and black pepper. Blend until smooth

    • Stir in the finely chopped shallots after blending.

  5. Assemble the salad

    • In a large bowl, combine white beans, chickpeas, roasted Brussels sprouts, roasted delicata squash, farro, and roasted chicken .

    • Drizzle with the Sun Dried Tomato Dressing. Toss gently to combine.

  6. Season and serve

    • Taste and adjust seasoning with salt and pepper as needed.

    • Serve immediately or store in an airtight container for meal prep.
