Sun Dried Tomato Dense Bean Salad Recipe
Salad Ingredients:
Chicken breast
sun dried tomatoes
shaved Brussels sprouts
white beans
chickpeas
delicata squash
farro
olive oil
salt & pepper
Sun Dried Tomato Dressing Ingredients
olive oil
red wine vinegar
2 garlic cloves
salt & pepper
shallots
Instructions:
Roast the vegetables
Preheat oven to 400°F (200°C).
Spread shaved Brussels sprouts and delicata squash on a baking sheet.
Toss with olive oil, salt, and pepper.
Roast for 20 minutes, stirring halfway through, until tender and lightly browned.
Roast the chicken
While the vegetables are roasting, place chicken breasts on a separate baking sheet.
Drizzle with oil from the sun dried tomato jar.
Roast for 20 to 25 minutes, until fully cooked through, depending on thickness.
Cook the farro
Cook farro in water according to package instructions. Drain and set aside to cool slightly.
Make the dressing
Using an immersion blender, combine olive oil, red wine vinegar, garlic cloves, salt, and black pepper. Blend until smooth
Stir in the finely chopped shallots after blending.
Assemble the salad
In a large bowl, combine white beans, chickpeas, roasted Brussels sprouts, roasted delicata squash, farro, and roasted chicken .
Drizzle with the Sun Dried Tomato Dressing. Toss gently to combine.
Season and serve
Taste and adjust seasoning with salt and pepper as needed.
Serve immediately or store in an airtight container for meal prep.
