High Protein Oatmeal Raisin Muffins


I made mine in my meal prep containers. Soft, slightly sweet, and full of protein, these muffins combine flour, rolled oats, protein powder, milk, olive oil, honey, cinnamon, and raisins. They are easy to portion for a morning snack or breakfast on the go.

Ingredients:

  • 1 ½ cups flour

  • ½ cup rolled oats

  • 2 Tbsp baking powder

  • ¾ cup unflavored protein powder

  • 1 ½ cups milk

  • ¼ cup honey

  • ½ cup olive oil

  • splash of vanilla extract

  • 2 tsp cinnamon

  • ⅔ cup raisins

  • coconut oil spray

Instructions:

  1. Preheat oven to 375° F and spray meal prep containers with coconut oil.

  2. In a bowl, combine flour, baking powder, protein powder, rolled oats, cinnamon, and raisins.

  3. Add milk, honey, vanilla extract and olive oil. Mix until just combined.

  4. Portion into meal prep containers. Transfer to oven on a baking sheet.

  5. Bake until muffins are cooked through, ~20 mins, and lightly golden.
