Chicken Shawarma Pitas
Served in pita bread with roasted cauliflower, onions, peppers, and a creamy roasted garlic sauce made with Greek yogurt and mayo, this lunch is full of bold flavor and nutrients. Fresh parsley adds brightness to each bite.

Ingredients:
Shawarma Spice Sauce
Roasted garlic olive oil
1 Tbsp cumin
2 tsp chili powder
1 tsp turmeric
1 tsp onion powder
1 tsp salt
Splash lemon juice
½ can tomato paste
1 Tbsp minced garlic
Fresh parsley
Roasted Proteins & Veggies
Chicken breasts, cubed
Cauliflower
Onions
Peppers
Shawarma sauce
Roasted Garlic Sauce
Greek yogurt
Mayonaise
Roasted garlic
Lemon juice
Parsley
Salt & pepper
Brown Rice

Instructions:
Preheat oven to 400° F.
Make the shawarma spice mix by combining cumin, chili powder, turmeric, onion powder, and salt. Stir.
Mix in minced roasted garlic, tomato paste, lemon juice, roasted garlic olive oil, and some regular olive oil.
Toss cauliflower, onions, and peppers in shawarma spice mix and roast on a sheetpan ~20 minutes.
Cube chicken into quarter-inch pieces, toss with shawarma sauce, and add sliced onions on top. Roast in the oven until cooked through (~45 minutes).
For the roasted garlic sauce, blend Greek yogurt, mayo, roasted garlic, lemon juice, salt, pepper, and chopped parsley until smooth.
Portion brown rice into containers, add roasted veggies, top with chicken, and drizzle with roasted garlic sauce.
Portion into meal prep containers.
Add fresh pita and other toppings (I like fresh avocado slices) daily. 😊
