High Protein Tomato Soup


This tomato soup is hearty and protein-rich. It reheats easily and pairs well with a side salad or bread for a cozy dinner.

Ingredients:

  • Ground turkey

  • Olive oil

  • Mirepoix (onion, carrot, celery)

  • Shredded kale

  • 2 jars diced tomatoes, low sodium

  • 1 jar tomato paste

  • Roasted tomatoes

  • Salt & pepper

Instructions:

  1. Preheat instant pot to sauté setting on medium high heat.

  2. Sauté mirepoix in olive oil until fragrant.

  3. Add bag of kale and stir and sauté until kale is wilted.

  4. Add ground turkey and cook until browned.

  5. Stir in diced tomatoes, tomato paste, roasted tomatoes, and season with salt and pepper.

  6. Cook in an Instant Pot on High for 30 minutes.

  7. Portion into meal prep containers and ENJOY! 😊
