Beef Bulgogi with Cauliflower Rice

Trying to make something you’ve never made can be intimidating! That’s how I felt starting this week’s dinner item. I had fun learning more about how to bring this one to life! See my full meal prep process for this week here.


Ingredients:

  • Lean ground beef

  • Sauce Mixture

    • Pear

    • White Onion

    • Garlic 

    • Rice vinegar

    • Sesame oil

    • Soy Sauce

    • Sesame seeds

    • Gochujang

    • Green onion, finely sliced

  • Cabbage mix (green, red, carrots)

  • Frozen cauliflower rice

  • Baby corn

  • White Rice

Instructions:

  1. Rinse & drain white rice and start cooking in rice cooker, per instructions.

  2. In a blender, combine pear, onion, garlic, sesame oil, rice vinegar, soy sauce and gochujang. Blend until smooth.

  3. Stir in sesame seeds and green onion.

  4. Mix sauce with ground beef by hand until evenly coated, being careful to not overmix.

  5. Heat olive oil in a braiser or sauté pan. Add beef mixture and flatten. Resist the urge to mix constantly. Instead, watch for water to pool on top of the mixture. When the water evaporates, stir and set aside.

  6. In a separate pan, sauté frozen cauliflower rice with olive oil spray until warmed through.

  7. Microwave broccoli until cooked, then separate larger pieces by hand.

  8. Microwave baby corn until cooked. Set aside.

  9. Quickly sauté cabbage mix with a little olive oil.

  10. Mix together cooked white rice and cauliflower. Set aside.

  11. Mix together beef, broccoli, cabbage and baby corn.

  12. Portion rice and cauliflower into bottom of meal prep containers.

  13. Portion beef bulgogi and veggies over rice mixture.

  14. Top with sesame seeds and green onions. ENJOY!
