Za’atar Chicken Salad

I love a quick chicken salad. This one had great flavor and came together quickly. The next time I make this I’ll try grilling my chicken. See my full meal prep process where I integrate this recipe.


Ingredients:

  • Chicken breast

  • Za’atar seasoning

  • White onion

  • Garlic

  • Chicken stock

  • Celery

  • Carrots

  • Garbanzo beans

  • White beans 

  • Tahini

  • Fresh parsley, chopped

  • Salt & pepper to taste

Instructions:

  1. In an Instant Pot, sauté diced onion in olive oil with salt.

  2. Add garlic and continue to sauté.

  3. Stir in za’atar seasoning. Deglaze with chicken stock.

  4. Add chicken breasts, coating each with za’atar and salt. Add remaining chicken stock and pressure cook until cooked through (~25 mins on high pressure).

  5. Release steam, move chicken to a bowl, and shred. Reserve broth.

  6. In a large bowl, chop celery, then add garbanzo beans and white beans (both drained and rinsed).

  7. Using reserved broth, add tahini and salt to taste. Use an immersion blender to fully mix.

  8. Add shredded chicken to mix with some of the za’atar tahini broth.

  9. Add fresh parsley and mix together.

  10. Taste and adjust with more tahini or seasoning if desired.

  11. Portion into meal prep containers and ENJOY!
