My Weekly Meal Prep Process

For me, meal prep is not about restriction. It is a tool that helps me feel prepared, nourished, and free from the constant question of “what’s for dinner.” It is a system that creates space in my week and supports my health in a way that works long term. See what I made this week. ⬇️


🍳Breakfast

Black Bean Breakfast Scramble

Add some fiber to your breakfast by adding black beans into scrambled eggs. This would be great in a tortilla to add some additional carbohydrates.

I love a quick chicken salad. This one had great flavor and came together quickly. The next time I make this I’ll try grilling my chicken.

Beef Bulgogi with Cauliflower Rice

Trying to make something you’ve never made can be intimidating! That’s how I felt starting this week’s dinner item. I had fun learning more about how to bring this one to life!

Shopping List

To make things even easier, here’s a full list of everything I used this week, grouped by grocery store sections so you can shop faster.

Produce

  • Brussels sprouts (shredded)

  • White onion

  • Garlic (pre-peeled packets if available)

  • Celery

  • Carrots

  • Pear (any variety)

  • Baby corn

  • Green onion (can use frozen)

  • Cabbage mix (green, red, carrots)

  • Fresh parsley

Protein & Dairy

  • Ground chicken

  • Chicken breast

  • Ground beef

  • Eggs

  • Cottage cheese

  • Feta cheese

Frozen

  • Frozen cauliflower rice

  • Frozen broccoli

Pantry

  • Can of black beans

  • Can of garbanzo beans

  • Can of white beans

  • Everything But the Bagel seasoning

  • Za’atar seasoning

  • Tahini

  • Chicken stock (low-sodium)

  • Rice vinegar

  • Soy sauce

  • Sesame oil

  • Gochujang

  • Sesame seeds

  • White rice

  • Salt and pepper

  • Olive oil
