Black Bean Breakfast Scramble

Add some fiber to your breakfast by adding black beans into scrambled eggs. This would be great in a tortilla to add some additional carbohydrates. See the full meal prep menu here.


Ingredients:

  • 12 eggs 

  • ½ container of cottage cheese, blended until smooth

  • 1 can black beans, drained & rinsed

  • 1 package ground chicken

  • 1 package shredded Brussels sprouts

  • Everything But the Bagel seasoning

  • Crumbled Feta Cheese

  • Olive oil

Instructions:

  1. Over medium heat, sauté ground chicken in olive oil until fully cooked.

  2. Drain and rinse can of black beans. Add to ground chicken.

  3. Add shredded Brussels sprouts to chicken and black beans and sauté until crispy. Stir often

  4. Add Everything But the Bagel seasoning.

  5. In a separate bowl, blend together cottage cheese, feta cheese and eggs.

  6. Add egg mixture to black bean mixture and scrambled until eggs are set.

  7. Portion into meal prep containers and ENJOY !
